The Executive Chef Mattia Bianchi prides himself on his meticulous and targeted search for raw materials: the best products of Valpolicella and Verona, selected directly from sustainable local markets. He also has the ability to invent and surprise with oriental aromas and flavours, and offers three different tasting menus, one of which is entirely vegan.

Chef Mattia Bianchi sources his ingredients from the vegetable garden and orchard of Byblos Art Hotel Villa Amistà, small sustainable local markets, and the farmers of Valpolicella; the latter form a common thread of his dishes, intertwined with oriental aromas and flavours. He calls his cuisine one of the territory which titillates the taste buds of international guests, but with a contemporary twist that surprises even those already familiar with the local cuisine. Roots, experiences, research and innovation characterise his menus.
